Yesterday required a trip down to the South Park area of Charlotte, which is a sound 45 minutes from the house. Knowing that it would not be a quick trip when you have two children in tow, I knew that it would be a full day, so I managed to be on top on my game and prepared dinner, simple baked Italian chicken, to eat right after breakfast.

One of the destinations on our list was South Park mall, which never disappoints. There’s a new H & M, an American Girl store, and a Pottery barn Kids that I had to take off anything but Hailey.

We ate Chipotle.

And gave Santa another solid effort.

Despite kaitlyn’s face, things went better, but clearly still not great.

Anyway, back to the chicken!

I was right to say that it was an all-day business, and the man was happy when I got home that all I had to do was a pop dinner and a spaghetti in a boiling pot.

Then we ate Italian chicken baked in the oven!

The family’s vote is that this recipe can stay for a while; everyone enjoyed it and I loved the ease of preparation and cleaning. Let me know what you think!

This baked Italian chicken dish is a simple and delicious meal on weekdays. Get ready if you want and put it in the oven when you’re done, and you’ll have a nutritious homemade meal that the family will enjoy in no time!

Ingredient

  • 4 large chicken breasts, flat pounded (about 2-2. 5 lbs)
  • 1/4 Tsp salt and pepper
  • 2 Tbsp olive oil
  • 28 Ounces marinara
  • 6 Ounces mozzarella (I use shredded, but you can use fresh if you like)
  • 2 Tbsp Italian breadcrumbs
  • 1 Tbsp Italian seasoning
  • 2 Tbsp freshly grated Parmesan

Instruction

Preheat oven to 350 degrees.

  • Crush the chicken until half an inch thick, then season with salt and pepper.
  • Heat olive oil in a large saucepan over medium heat.
  • Fry the chicken, about 3 minutes on each side.
  • Put marinara in a 9×13 baking dish.
  • Add the cooked chicken breasts to the marinara and garnish with mozzarella.
  • Spread the breadcrumbs evenly over the mozzarella, followed by Italian seasoning and Parmesan.
  • Cover with foil and bake for 25 minutes. Uncover and bake for the remaining 10 minutes until the internal temperature of the chicken reaches 165.

Serve on spaghetti with freshly grated parmesan, if desired.
